Just like most people probably are, I'm always looking for a good chicken recipe. I've been a little intimidated by breading chicken, fearing it would come out soggy. Here's the recipe I tried tonight, and it came out pretty good! The breading was crispy, and the chicken wasn't dry at all. Preheat oven to 450 degrees
2 Tbsp melted butter
1/8 Cup Annie's Honey Mustard Vinaigrette
1-2 cloves garlic, minced
1/4 Cup Panko
1 Tbsp grated parmesan
1 Tbsp minced parsley
1/2 lemon
2 boneless, skinless chicken breasts
- To prepare the chicken, squeeze lemon over both chicken pieces. Mix together butter, vinaigrette and the garlic in one bowl, and Panko, parm and parsley in another bowl. Dredge chicken in butter mixture to fully coat both sides. Dip just the top side of chicken in the Panko mixture. Place chicken crumb-side up in a shallow baking dish and bake for about 25 minutes.
Since only the top of the chicken is breaded, the bottom doesn't get soggy, and the ratio of breading to meat is perfect.
